In a medium bowl, combine the capsicum, carrots, bell peppers, boiled corn, onion, fresh coriander, cottage cheese, Schezwan sauce, mayonnaise, salt, and chili flakes. Mix well until all the ingredients are evenly combined.
Place a slice of bread on a flat surface, flatten it with a rolling pin and spoon a generous amount of the veggie mixture into the center. Spread it out slightly, leaving two opposite corners a little more exposed than the other two.
Sprinkle a generous layer of grated cheese over the veggie filling.
Carefully bring the two more-exposed opposite corners toward each other, allowing them to overlap slightly. Secure the corners with a toothpick to hold the boat shape in place. Repeat with the remaining bread slices.
Lightly brush or spread butter over the tops of the assembled bread boats.
Preheat the air fryer to 385°F. Place the bread boats in the air fryer basket and cook for about 10 minutes, checking every few minutes to ensure they become evenly crisp without overcooking.
Once the bread boats are golden brown and crisp on the outside, carefully remove them from the air fryer. Let them cool for a minute, remove the toothpicks, and serve warm with your favorite dip or dressing.
