Preheat the grill to 400°F (200°C).
Slice the zucchinis into ½-inch-thick slices at a slight angle. Cut the halloumi into ½-inch-thick slices and pat them dry with a paper towel.
Place the zucchini slices in a large bowl. Add a little olive oil, salt, and pepper, and toss to coat. Arrange the zucchini slices on the grill in a single layer. Close the grill and cook for about 5 minutes, until they have nice grill marks.
Drizzle the halloumi with a little olive oil and season with salt and pepper. Place the slices on the grill in a single layer, working in batches if needed. Grill for about 5 minutes, turning once, until nicely charred.
In a large bowl, add the chickpeas, onion, sun-dried tomatoes, honey, and dill. Mix gently to combine. Add the lemon juice, salt, and pepper, and mix again.
Add the grilled zucchini and halloumi to the chickpea mixture. Gently toss everything together and serve.
