Creamy Cucumber Sandwiches

This no-cook appetizer comes together in under 20 minutes and is wonderfully fresh, creamy, and satisfying. All you need is soft sandwich bread, crisp cucumber, and a flavorful creamy spread. Ingredients
  

  • 8 slices sandwich bread crusts removed
  • 1 cup hung curd
  • cup mayonnaise
  • 3 green chilies finely chopped
  • 2 tbsp fresh coriander finely chopped
  • ½ tsp black pepper
  • ½ tsp salt or to taste
  • ½ cup spicy cilantro dip
  • 2 cucumbers thinly sliced
  • 1 tsp red chili flakes
  • 2 tsp butter
  • ½ tsp black salt

Method
 

  1. In a medium bowl, combine the hung curd, mayonnaise, finely chopped green chilies, fresh coriander, black pepper, and salt. Mix well until smooth and creamy, with no lumps remaining.
  2. Take a slice of crustless bread and spread a generous layer of spicy cilantro dip evenly over it. Top with a generous layer of the prepared curd-mayo spread.
  3. Arrange 8–9 cucumber slices closely over the creamy layer to create a fresh, crunchy bite in every mouthful.
  4. Sprinkle the cucumber with red chili flakes and black salt for an extra burst of flavor.
  5. Spread a generous layer of butter over another slice of crustless bread and place it butter-side down over the cucumber layer. Gently press the sandwich together.
  6. Using a sharp knife, cut the sandwich into triangles or squares, depending on your preference. For clean, neat cuts, wipe the knife with a clean cloth or paper towel between slices.
