Boil the potatoes until tender, then dice them and transfer them to a large, deep plate.
Quickly dip each bread slice in water for about a second, then remove and gently squeeze it between your hands to remove all the excess water. Tear or cut the bread into small pieces.
Add the bread pieces to the diced potatoes along with the salt, red chili flakes, oregano, fresh coriander, and corn flour. Mix everything well, then use your hands to knead until it forms a soft, dough-like mixture.
Divide the mixture into small, tennis-ball-sized portions. Flatten each portion slightly with a fork, pressing gently to create four lines across the surface.
Heat the oil over medium heat. Carefully add 4–5 potato bites at a time, making sure not to overcrowd the pan. Fry for 5–6 minutes, turning them occasionally so they cook and brown evenly on all sides.
Once the potato bites are golden brown, crisp on the outside, and cooked through, remove them from the oil and place them on a paper towel-lined plate to drain. Serve hot with your favorite dipping sauce.
