Cucumber Silk Salad

This Cucumber Silk Salad is a refreshing side with thin cucumber ribbons and a spicy, tangy dressing. It’s easy to make and works well for weeknight dinners, parties, or holiday meals. You can prepare the cucumbers and dressing ahead of time, then assemble just before serving to keep the cucumbers fresh and crunchy.

Ingredients
  

  • 4 medium cucumbers
  • ½ cup soy sauce
  • ¼ cup mirin
  • 2 tbsp chili oil
  • 1 tbsp honey
  • 1 stalk green onion finely chopped
  • ½ tsp garlic minced
  • 1 tsp sesame seeds for garnish

Method
 

  1. Slice the cucumbers lengthwise into very thin strips, about 0.5 mm thick. Use a mandoline slicer or vegetable peeler to get even slices.
  2. Gather a few cucumber slices and gently roll them into a spiral. Repeat with the remaining cucumber slices.
  3. Arrange the cucumber ribbons close together in a large glass serving dish.
  4. In a small bowl, mix the soy sauce, mirin, chili oil, honey, garlic, and green onion.
  5. Pour the dressing evenly over the cucumber ribbons. Cover and refrigerate for at least 1 hour.
  6. Sprinkle with sesame seeds.
