This Cucumber Silk Salad is a refreshing way to enjoy cucumbers. It’s easy to make and has a spicy and tangy dressing.

Serve it as a side with dinner, or add it to a party or holiday spread. It’s not traditional kimchi, but the spicy and tangy flavors are similar.
You can make the cucumber ribbons and dressing ahead of time. Keep them separate and assemble the salad just before serving so the cucumbers stay fresh and crunchy.
