These fiery buffalo chicken bites are crispy on the outside, tender inside, and full of buffalo flavor. They’re great for game nights, parties, or a casual get-together with friends. They’re ready in under 30 minutes, so you can make them when you want something spicy without spending all evening in the kitchen.
You can serve the bites on their own or with a dipping sauce. Ranch, BBQ sauce, ketchup, or extra buffalo sauce all work well.

How to Make Fiery Buffalo Chicken Bites
INGREDIENTS:
- 2 pounds minced/ground chicken
- 1 cup panko
- 2 eggs
- 1/2 cup creamy ranch dressing
- 2 tbsp Frank’s Red Hot seasoning
- 2 cups spicy buffalo sauce
- Cooking spray
- Toothpicks

Step-by-Step Instructions
1. In a large bowl, combine the minced chicken, panko breadcrumbs, egg, red hot seasoning, and ranch dressing. Mix until everything comes together. I usually use my hands for this because it’s easier to work the ingredients together.

2. Preheat the oven to 400°F (200°C) and lightly spray a baking tray with cooking oil to prevent the chicken bites from sticking.
3. Divide the chicken mixture into 35–40 small portions. Roll each portion into a table-tennis-sized ball and arrange them evenly on the greased baking tray. Leave enough space in between. Bake for about 20 minutes, or until the bites are golden brown and cooked through.

4. Remove the tray from the oven and toss the chicken bites in buffalo sauce until evenly coated. Return them to the oven for another 10 minutes, until the sauce is heated through and sticking nicely to the bites.
