Cheesy Pizza Wraps

I simply love making these cheesy pizza wraps. They’re easy to make and packed with veggies and cheese. They’re a good choice you want something quick and easy.

I don’t usually serve them as a party appetizer, but they make a fun lunch for kids. You only need tortillas, chopped veggies, and cheese. Fill the tortillas, fold them up, and cook.

I make these when I’m craving pizza but don’t want to make a whole pizza.

I like the mix of crunchy vegetables and melted cheese. You can also change up the filling by adding grilled chicken, pepperoni, or more vegetables.

How to Make Cheesy Pizza Wraps

INGREDIENTS:

  • 5 jumbo flour tortillas, semi-cooked
  • 1 cup finely diced onion
  • ¼ cup boiled sweet corn
  • ½ cup finely chopped mixed bell peppers
  • 1 tsp red chili flakes
  • 1 tsp pizza seasoning or dried oregano
  • 1 tsp salt, or to taste
  • Butter, for cooking
  • ½ cup grated mozzarella cheese

Step-by-Step Instructions

1. In a medium bowl, add the diced onion, sweet corn, bell peppers, chili flakes, pizza seasoning, salt, and grated mozzarella. Mix everything together until well combined.

2. Take a semi-cooked tortilla and cut it in half. Place a spoonful of the filling on one half and shape it into a triangle.

Fold one side over the filling, then fold the other side over it to make a triangle.

Repeat with the remaining tortillas and filling.

3. Heat a pan over medium heat and lightly grease it with butter. Place the wraps seam-side down and cook until golden and crisp. Lightly butter the top, then carefully flip and cook the other side until golden brown and the cheese has melted.

4. Transfer the wraps to a plate and serve them hot with a dipping sauce.

Serve and Enjoy!

Important Recipe Notes:

  • Use semi-cooked tortillas since they’ll finish cooking in the pan once filled.
  • Finely chop the onion and bell peppers. They’ll mix well into the filling, making it easy to spread and fold into the tortillas.
  • Make sure the vegetables are completely dry before you’re adding them. Too much moisture can make the wraps soggy.
  • If the wraps open up, use toothpicks to secure them. Remove the toothpicks before serving.
  • You can make these ahead and reheat them, but they’re best fresh from the pan while the tortillas are crisp and the cheese is melted.
