I like making these creamy herb sandwiches when I have friends over or need a quick snack for guests. They’re a no-cook snack that takes less than 20 minutes to make. They’re especially handy when I don’t want to spend much time in the kitchen.
I often serve these at evening tea parties, and they’re usually gone pretty quickly. They’re good on their own, but I also like serving them with a spicy dip or store-bought dressing.

You can also make these sandwiches a few hours ahead. Assemble them, refrigerate them, and take them out when you’re ready to serve. They’re good fresh or after a few hours in the fridge.
How to Make Creamy Herb Sandwiches
INGREDIENTS:
- 8 slices sandwich bread
- ¼ cup softened cream cheese
- ¼ cup mayonnaise
- 2 tsp fresh mint leaves, finely chopped
- 2 tsp fresh coriander, finely chopped
- ½ tsp dill leaves(optional)
- ½ tsp lemon zest(optional)
- 1 tsp fresh lemon juice
- ½ tsp black pepper
- Salt, to taste

Step-by-Step Instructions
1. In a medium bowl, add the softened cream cheese and mayonnaise. Mix until smooth. Add mint, coriander, lemon zest, lemon juice, salt, and black pepper. Mix again.

2. Remove the crusts from the bread slices.

3. Spread the herb mixture evenly over one slice of bread. Top with another slice and gently press to secure the sandwich.

4. Using a sharp knife, cut the sandwiches into triangles, squares, or halves. Wipe the knife between cuts to keep the edges clean.

Serve and Enjoy!
Important Recipe Notes:
- Use fresh sandwich bread to keep the sandwiches soft. You can leave the crusts on, but removing them gives the sandwiches a cleaner look.
- Serve fresh: These sandwiches are best eaten immediately after assembling. If serving later, keep them covered in the fridge so the bread doesn’t dry out.
- Chill the sandwiches for 10–15 minutes for easier slicing.
- Use a sharp knife to cut the sandwiches cleanly. Wipe the blade between slices for cleaner cuts.
