No-Bake Apple Pie Truffles

I love apple pies, but I don’t always have the energy to bake one. So, I started making these No-Bake Apple Pie Truffles instead. They don’t need any flour, and they’re just as satisfying as apple pie.

They’re quick to make, and I love having a sweet treat on hand without using refined sugar. I often make these for friends and family during the holidays. The truffles look fancy enough for a party, but I can make them in just 15 minutes.

You can enjoy these truffles as a midday snack, pack them in your kids’ lunch boxes, or eat them with your evening tea.

How to Make No-Bake Apple Pie Truffles

INGREDIENTS:

  • 1 sweet red apple, diced
  • 5 pitted dates
  • 60 g almonds, soaked overnight
  • 1½ tsp ground cinnamon
  • ½ tsp cardamom
  • ½ tsp vanilla powder or vanilla essence
  • 60 g oats, lightly crushed
  • 3 tbsp shredded coconut

Step-by-Step Instructions:

1. In a food processor or blender, add the diced apple, dates, almonds, cinnamon, cardamom, and vanilla powder. Blend into a coarse paste. The mixture will look slightly grainy.

2. In a deep bowl, combine the apple-date mixture and oats. Mix well using a spoon. If the mixture feels too soft, chill it for an hour to firm it up.

3. Roll the mixture into balls about the size of a walnut.

4. Roll the balls in shredded coconut until nicely coated. Chill in the fridge for at least 2 hours before serving.

Important Recipe Notes:

  • You can store these truffles for up to 5 days, so feel free to make as many as you want. Just keep them in an airtight container in the refrigerator.
  • Don’t skip chilling the truffles. They might feel a little soft initially, but a few hours in the fridge helps them firm up.
  • These truffles use only dates as a natural sweetener. If you want to make them sweeter, add a tablespoon or two of granulated sugar.
  • If you don’t like coconut, try rolling the truffles in poppy seeds instead. They add a little crunch and look pretty, too.
  • I usually stick to the amount of cinnamon listed in the recipe, but you can add a little more if you like a stronger cinnamon flavor.
